Preparation: for best results, the following procedure is recommended: Let the sugar paste come to room temperature. Knead the sugar paste vigorously until it is smooth and elastic. Dust the work surface with a little powdered sugar and roll out the fondant evenly with a rolling pin (2-3 mm thick). Turn the sugar paste by a quarter so that it does not stick. When you roll out the fondant, are there still small cracks around the edges? Knead vigorously again until the edges are smooth when rolled out. Then the sugar paste is ready to use.
